Raw No-Bake Energy Squares

About the Recipe

This satiating combination of high fiber, protein, carbs and healthy fats are so functional and the perfect on-the-go or in the comfort of your home snack. They provide a boost of energy and will leave you full for hours. In addition, these bite size goodies impress with much needed iron, magnesium, calcium, vitamin A, B’s and potassium. Let’s add in antioxidants, bone-strengthening minerals, omega’s 3’s (an essential fatty acid the body cannot produce on its own.) The health benefits are huge in this bite size morsel packed with flavor, anti-inflammatory properties, immune-support, and nutrients galore!

Ingredients

4 Tablespoons of shelled hemps seeds

4 Tablespoons ground flax seeds

4 Tablespoons of chia seeds

1/3 C water

 

In a food processor add:

12 oz. of pitted Medjool dates

2 oz of goji berries

1 oz of pumpkin seeds

4 dried figs

¼ C cacao nibs

¼ C dark chocolate chips

1 teaspoon of pink salt


(Optional add in 2 Tablespoons of goji powder, acai powder, or other superfood powder)

Preparation


Line an oblong (12x8) pan with parchment paper and leave enough to hang over the sides. This will help to wrap and cover the top when you refrigerate.

In a large bowl add hemp, chia seeds and ground flax. Add water and cover your seeds. Allow the mixture to sit and soak up the water. Set aside. It will be thick and solid.

In your food processor add all other ingredients and process on high for 20-30 seconds. It will be ground up and sticky. Empty contents in the large, soaked seed mixture and use both hands to thoroughly mix all ingredients together. It will be sticky and heavy but  worth all the effort.

Transfer the mixture into your parchment lined pan and press down evenly. Cover with the overlay of parchment and transfer to the refrigerator for about an hour.

Cut up into squares and store in refrigerator or freezer. Enjoy!
