🌱 1 shallot, roughly chopped
🌱 1 tablespoon Dijon mustard
🌱 ¼ cup coconut aminos or soy sauce alternative
🌱 ¼ cup apple cider vinegar
🌱 ¼ cup tahini
🌱 1 teaspoon maple syrup
🌱 1 tablespoon dried herbs (for example, garlic & herb or lemon/pepper)
🌱 ¼ to ½ cup water, divided and depending on your preferred thickness
A handful of fresh baby arugula, fresh sprouts, micro greens, cilantro, or a combination of all the

Salt to taste and optional
Place shallot through dried herbs into a high-speed blender. Add in ¼ cup of water and fresh greens and blend. Depending on your desired thickness, enjoy as is, or add in more water and blend again for a thinner consistency.
