No-Fat Salad Dressing In

This dressing is the wonderful invention of two clients who looked all over for a simple dressing with no added fat and could only find a bland soy-based version. We improved it and made it healthier without soy and enhanced the fl avors with fresh herbs. If you feel discomfort from the vinegar, save this till after the Reset phase. Into Maintenance and beyond, this should be a staple for so many reasons. It’s void of preservatives, artificial flavors, and added sugar alcohols. 

Recently, I added some good-quality olive oil and served this over potato salad and on a cold chickpea and pasta salad. Thanks again, Karen and Laura!

Makes 1 1⁄2 Cups

Ingredients

1/3 cup water

¼ cup coconut or apple cider vinegar

¼ cup coconut aminos

1 shallot

Generous handful of herbs of your choice (cilantro, arugula, parsley, dill)

2 tablespoons maple syrup

2 tablespoons Dijon mustard 

Instructions

Put all the ingredients in a high-speed blender and blend until well combined and smooth. Store in a mason jar in the fridge. You will have to shake it up prior to using it.
