Chai Sweet Potato Muffins
Chai spices like ginger, cinnamon, and cardamom, may help to promote healthy digestion and reduce bloating. The combination of these warming spices with sweet potatoes, loaded with fiber, beta carotene, vitamins A, B, C, and antioxidants is not only delicious but supports a healthy immune system.

- ½ cup unsweetened applesauce
- 1 teaspoon vanilla
- ¼ cup maple syrup
- 1 ½ cup plant-based milk
- ¼ cup ground flaxseed
- 1 ½ cup cooked sweet potato
- ½ cup almond or buckwheat flour (buckwheat in Reset)
- 1 cup oats or sub 1 cup cream of buckwheat cereal if you are in the Reset stage
- 1 teaspoon ground ginger
- 1 tablespoon cinnamon
- ½ teaspoon cardamon
- ½ teaspoon allspice
- A pinch of ground cloves
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ¼ cup golden raisins
Reheat oven to 350 degrees.
In a blender cup add dates, applesauce, vanilla, syrup, and milk. Blend till smooth and creamy.
Add the contents to a large bowl with ground flaxseed and sweet potato. Mix well.
Add flour, oats, all spices, baking powder, baking soda and raisins. Mix all ingredients and divide evenly into muffin pan holders.
Bake for 30 minutes until muffins are golden brown and firm when lightly touched in the middle.
