Lemon, Ginger and Blueberry Protein Bites
Lemon, ginger, and blueberries combine to create this delightful, nutritious snack. The tartness of the lemon balances the sweetness of the blueberries, while ginger adds a refreshing ,complex kick that promotes health. - 1/3 cup combination of ground flax seed, pumpkin seed and hemp seeds*, divided
- ½ cup pumpkin protein powder
- ½ teaspoon pink salt
- 8 Medjool dates
- 5 pieces of crystalized ginger
- 1/3 cup dried blueberries
- ½ cup freshly squeezed lemon juice
- 1 tablespoon lemon zest
- 1/3 cup puffed quinoa cereal* (optional)(sub puffed rice cereal)
Add seeds (reserve two tablespoons on the side), protein powder, salt, dates, ginger, blueberries/lemon juice, and zest in a food processor. Puree to the mixture is well-combined. Transfer the contents to a large bowl, add optional puffed cereal, and fold in.
With your hands, make bite-size balls by gently rolling between your hands. Roll in the reserved seeds. Transfer to an airtight container.
*Grind with a small blender or coffee grinder, or purchase a brand Beeya, that supports seed cycling.
*If you use puffed cereal and want the bites to stay crunchy, store them in the freezer and thaw for five minutes before eating.
