Collard Green Superfood Wrap W/ Creamy Pistachio-Arugula Dressing

This is a great way to get your daily dose of vitamin A, vitamin C , potassium, iron, folate, B6 and much-needed fiber for a healthy microbiome.
Collard greens boost bone and liver health, and aid in optimal digestion.
Prepare collard greens by steaming in a skillet with about 2 inches of salted (optional) water. Dip greens one at a time until softened (about 10 - 20 seconds). Lay flat on a kitchen towel to dry. Trim the thick part of the stem away.

Ingredients
  

2 wraps:

  • 1 cooked sweet potato, cooled and sliced or cubed
  • 1/2 Cup refried beans
  • 1 avocado sliced
  • 1 cup fresh baby spinach leaves
  • Green onions sliced
  • Cilantro springs chopped
  • Salt and pepper to taste
  • Prepared Pistachio-arugula dressing

Instructions
 

  • Take prepared collard greens and lay out (should resemble a circle, you can overlap pieces if they have broken apart)
  • On half of the circle spread refried beans, sweet potato, avocado, spinach leaves, cilantro and scallions. Use salt and pepper to taste.
  • Wrap up like a burrito and tuck corners in while rolling. Serve with dressing and enjoy!
