Cinnamon Raisin Quinoa Waffles

Take the traditional waffle and transform it into a delectable, nutritious, and enjoyable experience. Cinnamon Raisin was the inspiration but was created with various health benefits. No refined carbs or sugars here. A nutritional boost with ground flaxseed, quinoa flakes, and buckwheat. Instead of empty calories, this dish will provide more fiber, protein, omega-3 fatty acids, healthy fats, and a delicious taste beneficial for any time your heart desires.

Ingredients
  

  • 1/3 cup ground flaxseed
  • 1 ½ cup plant-based milk
  • 2 tablespoons maple syrup
  • 2 tablespoons tahini
  • 1 tablespoon vanilla
  • 1 ¼ cup quinoa flakes
  • ¾ cup buckwheat flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt or sub 1 teaspoon lime juice if avoiding salt
  • ½ cup of raisins

Cinnamon Swirl (optional) (skip the butter if in the Reset stage)

  • 2 tablespoons of vegan butter
  • 1 tablespoon maple syrup
  • 1 tablespoon cinnamon

Instructions
 

  • In a large bowl, combine flaxseed through vanilla and whisk together. Add quinoa flakes, buckwheat flour, baking powder, and salt. Stir in until well combined.
  • Heat the waffle maker and spray with olive or avocado oil. Scoop about ¼ cup of the mixture for each waffle and cook according to the manufacturer’s directions.
  • In a separate bowl, combine ingredients for the cinnamon swirl (optional) and use about a teaspoon to garnish each waffle.
