Dragon Fruit Protein Bites
Not only does dragon fruit showcase a beautifully deep and inviting color, but it is also nutrient-dense and rich in fiber, antioxidants, vitamins, and minerals. I’ve crafted a protein energy bite and enhanced the flavor with fresh lemon and a touch of sweetness for a perfectly balanced treat.
- 1 package of frozen dragon fruit puree (defrosted)
- ½ cup lemon juice
- 1 tablespoon lemon rind
- 1 tablespoon vanilla
- 4 figs (I used Calimyrna figs, typically bigger in size, so if you use black mission, double the amount)
- 3 Medjool dates, pitted
- ¼ cup + 1 Tablespoon unsweetened coconut, divided
- ½ cup unflavored protein powder ( I used pumpkin protein powder)
- 2 Tablespoons toasted pumpkin seeds, finely chopped
- 2 Tablespoons of hemp hearts
Add the dragon fruit, lemon juice, rind, and vanilla in a large bowl. Set aside.
In a food processor, combine the figs, dates, protein powder, and ¼ cups of coconut until crumbly and well combined.
Add the remaining coconut with the pumpkin seeds and hemp hearts in a smaller bowl. Set aside
Line a baking sheet with parchment paper.
Transfer the contents to the dragon fruit mixture and mix well. Use your hands to form small two-bite balls and coat them in the coconut mixture. Refrigerate in an airtight container or freeze to enjoy as a frozen treat.
